It's a beautiful potato salad, which Betty has refined over the years, by incorporating little bits of knowledge that only come with many years of experience. Ingredients: 3 medium to large Idaho baking potatoes 1 tablespoon salt 3 eggs, boiled and chopped finely 1/2 cup chopped celery 1/4 cup chopped green bell pepper 1/4 cup chopped red bell pepper 1/4 cup chopped onion 2 tablespoons sweet pickle relish 1 cup mayonnaise 1 teaspoon prepared yellow mustard 1 tablespoon sweet pickle juice dash of ground black pepper sprinkling of paprika for top Fill a medium to large pot about halfway full of water. Add 1 tablespoon salt, and bring the water to a rolling boil. In the meantime, peel your 3 baking potatoes, and cut them in half horizontally and then vertically, making 4 equally-sized pieces of each one. When the water is boiling, carefully place the 12 chunks of potatoes into the boiling water. When they come back up to a boil, reduce the heat, and cook at a low boil for about 20 minutes, until tender when tested with a fork. Drain the water through a colander into the sink, and place the drained potato chunks in a large mixing bowl. Let the potatoes sit for about 20 minutes, and then start assembling your potato salad while the potato chunks are still warm. Ingredients: 1/2 head of Romaine lettuce, washed, dried with paper towel, and torn into pieces 2 cups croutons (You may use my Buttery Croutons, or some other type.) 1 dozen cheese crisps (You may use my Parmesan Cheese Crisps, or substitute butter-flavored crackers.) 1 cup mayonnaise 1 tablespoon lemon juice 1 teaspoon Worcestershire sauce 1 clove of garlic, minced 1/4 teaspoon salt 1/8 teaspoon freshly ground black pepper 1/2 cup finely shredded Parmesan cheese 1 tablespoon milk anchovies, to taste (optional) additional Parmesan cheese for topping In a deep bowl, combine 1 cup mayonnaise, 1 tablespoon lemon juice, 1 teaspoon Worcestershire sauce, 1 clove minced garlic, 1/4 teaspoon salt, 1/8 teaspoon freshly ground black pepper, 1/2 cup finely shredded Parmesan cheese, 1 tablespoon milk, and anchovies to taste (if desired). Use a whisk or an electric blender to combine until well-blended. Chill dressing for a couple of hours to let flavors meld. In a large salad bowl, place 1/2 head prepared Romaine lettuce, along with desired amount of Caesar dressing and desired amount of croutons. These green beans and potatoes are a staple of Southern cooking. This is a lighter version of typical Southern green beans that I think you will enjoy. Ingredients: 1 pound green beans, washed and broken into pieces about 1-inch long 1 pound small new potatoes (I used Red Pontiac variety.) 2 tablespoons vegetable oil (I used canola oil.) 1 ½ teaspoons salt, divided water, as needed Place 1 pound of prepared green beans in a medium-sized pot. Add 2 tablespoons vegetable oil and 1 teaspoon salt. Pour water over the beans, until they are just covered. Bring to a boil over medium-high heat. Reduce heat and simmer for about 2 hours. Place new potatoes in with the (almost) cooked green beans. Add an additional ½ teaspoon salt, and additional water to cover the beans and potatoes. Bring back to a boil over medium-high heat. Reduce heat to low, and cook until potatoes are done. Pour into a serving bowl and serve immediately. If there are leftovers, they may be refrigerated and re-heated the next day. Burgers, sloppy joes, meatballs, meaty spaghetti sauce, and of course- MEATLOAF. Since I posted my salsa meatloaf recipe on Youtube, I have been asked for more meatloaf recipes. I have plenty! If you're looking for a great Turkey Meatloaf, I have one available in my downloadable recipe book. This recipe I am about to share with you is my families favorite meatloaf recipes. My guys love to make meatloaf burgers out of the left overs, and I must admit, they are grrrreat. Like my salsa recipe , this meatloaf has a tomato base. I haven't post my meatloaf and gravy yet so sit tight! No need to worry about expensive ingredients. More that likely you have these ingredients in your kitchen now.
